Spinach, black bean and fake chicken quesadillas with zucchini and corn salsa

Sometimes, we grad students forget to eat. Or at least to eat well. I forgot to eat lunch today and headed to the grocers. I decided to make quesadillas. What started out as a simple and quick dinner turned into a fun experiment that turned out deliciously.

1 small zucchini
1 ear of corn
1 tomato
1 jalapeño
3 cloves of garlic
1/4-1/2 tsp cumin
Some lime juice
Some salt

Cut the kernels off the cob. Chop the zucchini into small pieces. Toss in skillet with oil. Fry till cooked, not soggy. Toss into chilled bowl and pop into the freezer.

Chop tomato. Chop garlic and jalapeño and coat in lemon, cumin, and salt. when fried bits cool, mix everything in a bowl.

I made the quesadillas with cheese, black beans, banana peppers, ad spinach.
